Ridiculous Tuna Salad:

It’s ridiculous how amazing this tuna salad is.

This Ridiculous Tuna Salad is Ridiculous. Was that redundant? Oh well, it’s ridiculous. By ridiculous I mean amazing. You will make enough for at least 2 people, but trust me when I say that you won’t be sharing. You probably won’t even have any left over to share. It’s that ridiculous. If you wanna make this paleo, just leave out the feta!! (It’s much better with the Feta, so if you aren’t paleo, leave it in for the sake of the ridiculous-ness). Okay, enough about me. Here’s the recipe!

INGREDIENTS

2 cans of Tuna in water

1 avocado

Carrots

Onion

Feta Cheese

Tomatoes

Lemon Juice

Olive Oil

Salt

Pepper

1. Open up the cans of tuna, and put them in a bowl.

2. Chop up the carrots into tiny pieces. Add to the bowl.

3. Chop up the onion into tiny pieces. Add to the bowl.

4. Slice the avocado in half, and spoon all of it into the bowl.

5. Chop up the tomatoes into bite sized pieces and add to the bowl. (equal parts to everything else)

6. Add some olive oil.

7. Sprinkle a layer of pepper on top of it all.

8. Sprinkle about ¼ the amount of salt. The feta added later will make it more salty.

9. Mix it all up so everything is divided equally.

10. Give it a taste.

11. Add in some lemon juice. Keep adding until it tastes PERFECT.

12. Add in a bunch of feta on top. Mix in to evenly distribute.

YUM YUM YUM YUM. IT’S DONEEEE. Ridiculous, right? I know.

In the pictures you see here, I added this Ridiculous Tuna Salad on top of my Simple House Salad, and placed some  tortilla chips around the plate for more pretty colors and delicious flavors. I highly recommend all of the above suggestions. But after all, it’s your life, and your palate. Do what you wish.
