Healthy Farro, Risotto Style!

 … creamy AND healthy? Is it possible? Oh, yes. Yes it is.

I had a bag of Farro in my pantry and I wasn’t sure what to do with it. Some googling later, I come across a risotto dish that is HEALTHY? What was this madness? Apparently it is true. Farro is like rice… but healthier for you. How? It’s a great source of protein, has a bunch of vitamins that boost your immune system (B, magnesium, zinc) and has a bunch of fiber! This to me sounds like eating risotto helps you from getting sick… that’s good enough for me! Now on with the recipe…

INGREDIENTS

Farro

Shaved Asiago or Parmesan Cheese

Bag of Spinach

Garlic Cloves (2 or 3)

1 tbsp Butter

Water

Salt

Pepper

1. Rinse the Farro and throw it in a pot.

2. Pour water in the pot, about twice as much as the Farro.

3. Bring the pot to a boil.

4. Once boiling, reduce the flame to low, cover the pot and wait for all the water to be absorbed. About 20ish minutes?

5. Chop up the garlic cloves super tiny. Set aside about a handful of shaved cheese, and 1tbsp slice of butter… I know this blog doesn’t have measurements on it, but the butter I used has tbsp measurements on the wrapper so it doesn’t actually require any measuring! 🙂

6. When most of the water is absorbed, grab a handful of spinach and tear the leaves with your fingers before throwing it into the pot. Mix it as you ago, and add as much as you’d like!

7. Throw in the butter, garlic, and cheese and mix! Let it all melt together and spread throughout evenly.

8. YUMMMMMM. Dats it.

Grab a bowl and pour yourself a helping of all these vitamins!! (That’s basically what we just made, right?) You’ll probably need to add a lot of salt and pepper too, so have that on hand.
