Shrimp Avocado Salad

 … also known as OMG AMAZING. GIMMEMORE.

Soooo… I was craving something fresh and light with creamy avocado and some sort of fish. And then this happened. IT’S SO PERFECT. This recipe makes enough for a little more than two servings, but you may not be able to share. I had to stop myself and hide it out of sight. I should probably put a warning here… you may eat it all. It’s that delicious. And so simple! Well ladies and gentlemen… without further ado… go make yourself this Brilliant Shrimp Salad. Bam!

INGREDIENTS

Shrimp

(cooked, deveined, no-tail.. I like Trader Joe’s frozen bags! just thaw and you’re good to go.)

1 Tomato

1 Avocado

(go for one a bit harder, and not too mushy)

1 Jalapeño

Red Onion

(only a little bit, maybe ⅛ of a whole one?)

Olive Oil

Lime

Salt

Pepper

1. If your shrimp is cooked but frozen, thaw it! Throw it in a strainer and run room temp water over it.

2. Thinly slice the red onion, you only need about two or three spoonfuls. Throw it in a bowl.

3. Squeeze the juice of one lime over the red onions.

4. Throw a dash of olive oil into the bowl.

5. Sprinkle salt and pepper on top. Mix and let it sit for a few.

5.  Dice the avocado, one tomato, and one jalapeño. Throw it all into the red onion mix.

6. Add the shrimp to the bowl.

7. YOU DONEEEE.

8. Taste that beauty.

You can add juice from another lime and some more olive oil for more dressing. Salt and pepper might spruce it up a bit too if it needs it.
