Simple Arugula Salad
What I Used:
  • Shrimp (cooked, deveined, no-tail)
  • 1 Tomato
  • 1 Avocado (go for one a bit harder, and not too mushy)
  • 1 Jalapeño
  • Red Onion (only a little bit, maybe ⅛ of a whole one?)
  • Olive Oil
  • Lime
  • Salt
  • Pepper
How to do It:
  1. If your shrimp is cooked but frozen, thaw it! Throw it in a strainer and run room temp water over it.
  2. Thinly slice the red onion, you only need about two or three spoonfuls. Throw it in a bowl.
  3. Squeeze the juice of one lime over the red onions.
  4. Throw a dash of olive oil into the bowl.
  5. Sprinkle salt and pepper on top. Mix and let it sit for a few.
  6. Dice the avocado, one tomato, and one jalapeño. Throw it all into the red onion mix.
  7. Add the shrimp to the bowl.
  9. Taste that beauty. You can add juice from another lime and some more olive oil for more dressing. Salt and pepper might spruce it up a bit too if it needs it.
